Instructions
Heat the oil in a large pot over medium-high heat. Add the onion and sauté until it's translucent, 4 to 5 minutes.

Add the garlic and sauté for 1 minute.

Add the turnips, apples, brown sugar, salt, white pepper, cinnamon, cardamon, allspice, and cayenne and sauté until fragrant, about 2 minutes.

1 ½ teaspoons kosher salt,
¾ teaspoon white pepper,
¾ teaspoon ground cinnamon,
½ teaspoon ground cardamom,
¼ teaspoon ground allspice,
⅛ teaspoon cayenne pepper
Add the stock and bring to a boil. Reduce the heat to low, partially cover the pot, and simmer for 20 minutes to soften the turnips and apple.
4 cups chicken stock
Remove the pot from the heat. Pour the soup into a blender (in batches if necessary) and puree until smooth.
Stir in the cream. Serve garnished with a drizzle of olive oil and cream, some chopped apples, and a sprinkle of cinnamon.
