Instructions
Put all the ingredients into a 3 to 4 quart crockpot and mix well.

⅓ cup Dijon mustard,
1 tablespoon ginger root,
⅛ teaspoon pepper,
½ teaspoon salt
Cover and cook on high for 2 to 3 hours or until the carrots are tender. Stir twice during cooking.
