A Quick and Easy Side Dish
This is one of our go-to recipes when we need a side dish with minimal prep, because it's just slicing the carrots, mincing the ginger, and mixing with the seasonings.
I'm old school when it comes to prepping. I prefer to use a chef knife and cutting board for slicing, chopping, and mincing, and a box grater for grating and slicing. It gives me more connection with the food and more control, and I find that it calms me and helps me focus. And I don't have to clean machines!
Now, I love my kitchen gadgets, and I will use a food processor if I'm in a hurry. And of course I couldn't live without my Vitamix blender! So if you want to speed up the prep, by all means use a mandoline or food processor to slice the carrots, and grate the ginger instead of mincing it.

Learn to Make Slow Cooker Gingered Carrots
Here are the ingredients: carrots, brown sugar, mustard, salt and pepper, and ginger. When I pulled my brown sugar out I found that it had crystalized, but it still works. Now I have to do a search and find out how to soften it again!
Put all the ingredients in the slow cooker and mix. That's it! Cook on high for 2 to 3 hours, depending on how soft you like them. Open the pot and stir a couple of times while it's cooking.
Here it is after two hours.
These carrots taste so good! The combination of flavors is amazing.
We made this as part of a meal. Here it is plated with spiced pulled pork and turmeric potatoes.

Slow Cooker Gingered Carrots
Ingredients
- 12 carrots sliced into ¼ inch slices
- ½ cup brown sugar
- ⅓ cup Dijon mustard
- 1 tablespoon ginger root peeled and minced
- ½ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Put all the ingredients into a 3 to 4 quart crockpot and mix well.12 carrots, ½ cup brown sugar, ⅓ cup Dijon mustard, 1 tablespoon ginger root, ⅛ teaspoon pepper, ½ teaspoon salt
- Cover and cook on high for 2 to 3 hours or until the carrots are tender. Stir twice during cooking.
