Ingredients
 

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic thinly sliced
  • 1 ½ pounds turnips peeled and diced
  • 3 Granny Smith apples peeled and diced
  • 2 tablespoons dark brown sugar packed
  • 1 ½ teaspoons kosher salt
  • ¾ teaspoon white pepper
  • ¾ teaspoon ground cinnamon plus more for serving
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground allspice
  • teaspoon cayenne pepper
  • 4 cups chicken stock
  • 4 tablespoons heavy cream

Instructions
 

  • Heat the oil in a large pot over medium-high heat. Add the onion and sauté until it's translucent, 4 to 5 minutes.

  • Add the garlic and sauté for 1 minute.

  • Add the turnips, apples, brown sugar, salt, white pepper, cinnamon, cardamon, allspice, and cayenne and sauté until fragrant, about 2 minutes.
    1 ½ pounds turnips, 3 Granny Smith apples, 2 tablespoons dark brown sugar, 1 ½ teaspoons kosher salt, ¾ teaspoon white pepper, ¾ teaspoon ground cinnamon, ½ teaspoon ground cardamom, ¼ teaspoon ground allspice, ⅛ teaspoon cayenne pepper
  • Add the stock and bring to a boil. Reduce the heat to low, partially cover the pot, and simmer for 20 minutes to soften the turnips and apple.
    4 cups chicken stock
  • Remove the pot from the heat. Pour the soup into a blender (in batches if necessary) and puree until smooth.
  • Stir in the cream. Serve garnished with a drizzle of olive oil and cream, some chopped apples, and a sprinkle of cinnamon.
