Ingredients
 

  • 16 ounces macaroni uncooked
  • 1 (14-ounce) package coleslaw mix
  • 1 medium onion finely chopped
  • 2 ribs celery finely chopped
  • 3 Persian (mini) cucumbers or 1 English cucumber sliced
  • 1 medium bell pepper finely chopped
  • 2 cups mayonnaise
  • ¼ cup apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Cook the macaroni according to package directions; drain and rinse in cold water.

  • Add the coleslaw mix, onions, celery, cucumber, and bell pepper to a large bowl.

  • Add the mayonnaise, apple cider vinegar, lemon juice, lime juice, salt, and pepper to the bowl. Toss well to coat the vegetables with the sauce.
    2 cups mayonnaise, ¼ cup apple cider vinegar, 1 tablespoon lemon juice, ½ teaspoon salt, ¼ teaspoon black pepper, 1 tablespoon lime juice
  • Add the macaroni to the bowl and gently fold it in with the vegetables.
  • Cover and refrigerate for at least 1 hour.
