Ingredients
 

  • 1 ½ tablespoons red wine vinegar
  • ½ teaspoon dried oregano
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 1 English cucumber thinly sliced
  • 6 Campari tomatoes cut into wedges
  • 1 cup radishes sliced
  • 3 green oinions sliced
  • ½ cup feta cheese crumbled

Instructions
 

  • Put the vinegar, oregano, mustard, salt, and olive oil in a medium bowl and whisk to combine.

  • Add the cucumber, tomatoes, radishes, and feta cheese to the bowl and toss to coat with the dressing.
    1 English cucumber, 6 Campari tomatoes, 1 cup radishes, ½ cup feta cheese, 3 green oinions
  • Chill in the refrigerator for at least an hour. Serve as a side dish, or as a meal with soup and bread.
