This is a tasty side dish that's really easy to make! Sweet carrots, spicy ginger, and pungent mustard are a great combination!

Ingredients
 

  • 12 carrots sliced into ¼ inch slices
  • ½ cup brown sugar
  • cup Dijon mustard
  • 1 tablespoon ginger root peeled and minced
  • ½ teaspoon salt
  • teaspoon pepper

Instructions
 

  • Put all the ingredients into a 3 to 4 quart crockpot and mix well.
    12 carrots, ½ cup brown sugar, ⅓ cup Dijon mustard, 1 tablespoon ginger root, ⅛ teaspoon pepper, ½ teaspoon salt
  • Cover and cook on high for 2 to 3 hours or until the carrots are tender. Stir twice during cooking.
