Instructions
Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
In a large bowl, combine the potatoes, onion, garlic, seasonings, and olive oil. Mix to combine until the potatoes are well-coated.

2 pounds red potatoes,
2 teaspoons turmeric powder,
1 teaspoon salt,
½ teaspoon black pepper,
2 teaspoons garam masala,
3 tablespoons olive oil
Pour the potatoes onto the baking sheet.
Bake for 30 minutes, removing every 10 minutes to stir and toss the potatoes so that they bake evenly.
