I don't make many short-list dishes with only 5 ingredients because I like more of a challenge in the kitchen. But sometimes you want a fast and simple side dish that will go with anything. This spinach dish hits the mark! It only has 3 ingredients and takes less than 15 minutes to make!
Heat the oil in a large skillet over medium heat. Add the garlic to the pan and sauté until fragrant and slightly browned around the edges, about 3 minutes.
Increase the heat to medium-high and add the spinach by handfuls, stirring and letting it wilt slightly after each addition. Season with kosher salt and freshly ground pepper. Continue to cook the spinach, stirring often, until it's mostly wilted, about 1 minute. Remove the pan from the heat.
10 ounces baby spinach
Add the sour cream and stir until the spinach is coated. Adjust the seasoning to your taste with additional salt and pepper.
