This soup is perfect for a cool meal on a hot summer day. It can also be served hot on a cold winter day! We like our food highly flavored, so if you're not used to a lot of spices you can reduce the amounts... especially the cayenne!

Ingredients
 

  • 2 tablespoons olive oil
  • 1 large clove garlic minced
  • 1 (1-inch) piece fresh ginger grated
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 pound carrots chopped into 1-inch pieces
  • 1 teaspoon salt
  • 4 cups water
  • 1 cup Greek yogurt
  • Chopped pistachios for garnish

Instructions
 

  • Heat the oil in a large pot over medium heat. Add the garlic, ginger, turmeric, cumin, nutmeg, cinnamon, black pepper, and cayenne pepper and stir until fragrant, about 2 minutes. Don't let the spices start to brown!

  • Add the carrots and salt and stir to coat them with the spices.

  • Add the chicken stock, bring to a boil, then set the heat to low and simmer until the carrots are tender, about 20 minutes.

  • Pour the soup into a blender and puree until smooth. Add the yogurt and blend to mix it in.
    1 cup Greek yogurt
  • Pour the soup into a large bowl and chill in the refrigerator for about three hours. Serve with additional Greek yogurt and garnishes.
