Sheet Pan Roasted Turmeric Potatoes

I love cooking on a sheet pan. You can make a complete meal... protein, veg, and carbs... on one pan. Once you master the basic technique you can make an endless variety of dinners! Here I've made Turmeric Potatoes as a side dish.

Ingredients
 

  • 2 pounds red potatoes cut into 4 to 8 pieces
  • 1 onion chopped
  • 4 cloves garlic thinly sliced
  • 2 teaspoons turmeric powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 teaspoons garam masala
  • 3 tablespoons olive oil

Instructions
 

  • Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
  • In a large bowl, combine the potatoes, onion, garlic, seasonings, and olive oil. Mix to combine until the potatoes are well-coated.
    1 onion, 4 cloves garlic, 2 pounds red potatoes, 2 teaspoons turmeric powder, 1 teaspoon salt, ½ teaspoon black pepper, 2 teaspoons garam masala, 3 tablespoons olive oil
  • Pour the potatoes onto the baking sheet.
  • Bake for 30 minutes, removing every 10 minutes to stir and toss the potatoes so that they bake evenly.
