Sautéed Spinach With Garlic and Sour Cream

I don't make many short-list dishes with only 5 ingredients because I like more of a challenge in the kitchen. But sometimes you want a fast and simple side dish that will go with anything. This spinach dish hits the mark! It only has 3 ingredients and takes less than 15 minutes to make!

If you've been following me you know that I love to tinker with recipes. Add some more ingredients, or substitute some ingredients. Add herbs and spices for more flavor. Or transform the recipe into something completely different. That's how I have fun in the kitchen!

But sometimes I just want to something simple. (Believe it or not!) Maybe I don't want to be the Kitchen Wizard that day, or I want something that's delicious but that won't steal the spotlight from the main dish. Or maybe I just want spinach and sour cream. Or I don't have a lot of time to get dinner on the table, so it's steak and a side dish. So I make something like this. And you can too! Here's how...

Ingredients

You'll just need three ingredients: garlic, spinach, and sour cream. Okay, you might want to season it with salt and pepper, but that's optional.

Come to think of it, adding some sumac would brighten it up a bit. Whoops, there I go, tinkering again!

  • garlic, thinly sliced
  • baby spinach, baby!
  • sour cream

Instructions

About the only thing easier than making this dish is boiling water. (You do know how to do that, right?)

Sautéed Spinach With Garlic and Sour Cream cooking garlic

Sauté the garlic. You want it to just start turning brown around the edges. It will keep cooking while you're cooking the spinach.

Add a handful of spinach and stir until it starts to wilt. It helps if you have a deep pan so you can toss the spinach around without it jumping out of the pan.

Keep adding spinach and stirring until it's all wilted. (See how brown the garlic has gotten?)

Dump the sour cream in...

And stir it all together.

Serve it up with your main dish.

I made this to go with a top round London broil that I cooked sous vide in the Ninja Combi cooker.

Substitutions/Variations

  • Sour Cream - replace with cream cheese or Greek yogurt, or with crème fraîche if you want to get fancy. Or use Boursin or Alouette cheese if you really want to impress your friends!
  • Add some herbs with the sour cream, then you don't have to buy Boursin or Alouette!

Special Equipment Needed

  • 1 Chef knife
  • 1 Cutting board
  • 1 Large skillet
  • 1 Stirring spoon

Ingredients
 

  • 2 tablespoons. extra-virgin olive oil
  • 6 cloves garlic thinly sliced
  • 10 ounces baby spinach
  • ½ cup sour cream
  • Kosher salt and black pepper to taste

Instructions
 

  • Heat the oil in a large skillet over medium heat. Add the garlic to the pan and sauté until fragrant and slightly browned around the edges, about 3 minutes.
    2 tablespoons. extra-virgin olive oil, 6 cloves garlic
  • Increase the heat to medium-high and add the spinach by handfuls, stirring and letting it wilt slightly after each addition. Season with kosher salt and freshly ground pepper. Continue to cook the spinach, stirring often, until it's mostly wilted, about 1 minute. Remove the pan from the heat.
    10 ounces baby spinach
  • Add the sour cream and stir until the spinach is coated. Adjust the seasoning to your taste with additional salt and pepper.
    ½ cup sour cream, Kosher salt and black pepper
