Here's a classy and flavorful way to prepare salmon! Sour cream, breadcrumbs, chopped pistachios, and horseradish make a tasty crust. Dinner is ready in half an hour!

The Great Fish Challenge, Part 1
Debbie is not a big fan of fish. She loves some seafood, like shrimp and lobster. She doesn't like most fish, except tuna or salmon sashimi. And she can't stand mollusks (clams, oysters, and scallops). There's no hope of her coming to terms with mollusks, they contain a lot of zinc and she doesn't react well to that. But I've taken on the challenge of finding some cooked fish recipes that she likes.
Her reaction to this dish was, "I wasn't crazy about it," so I'm considering it a mild success. I loved it, and I hope you will too! Meanwhile, the search for an acceptable fish recipe continues! Stay tuned for future progress reports!
Ingredients You'll Need
- salmon fillets (the recipe calls for 6, but I only made 4)
- sour cream
- bread crumbs
- pistachios
- shallots
- olive oil
- prepared horseradish (not horseradish sauce!)
- fresh dill
- orange zest
- red pepper flakes
- garlic
How to Make Salmon with a Tasty Crust
Presenting: The Ingredients! Salmon, bread crumbs, sour cream, horseradish, dill, orange zest, red pepper flakes, garlic, oilive oil, shallots, and pistachios.
You really want the pungent flavor of horseradish in the coating. But if you want a milder flavor you can substitute horseradish sauce. Just be aware that it will make the coating a bit looser and it might not adhere as well.
Preheat the oven to 350°F.
Put the salmon fillets in an ungreased baking pan, skin side down. I recommend lining the pan with tinfoil or parchment paper to make cleanup easier.
Spread the sour cream over the fillets.
Combine the remaining ingredients.
Pat the mixture onto the fillets, pressing to help the coating adhere.
Bake until the fish just begins to flake easily with a fork, 10 to 12 minutes. Here they are out of the oven.
Serve with your favorite side dishes. I made steamed asparagus to go with it.

Salmon with a Pistachio and Horseradish Crust

Ingredients
- 6 (4-ounce) salmon fillets
- ⅓ cup sour cream
- ⅔ cup dry bread crumbs
- ⅔ cup pistachios chopped
- ½ cup shallots minced
- 2 tablespoons olive oil
- 2 tablespoons prepared horseradish
- 1 tablespoon fresh dill chopped
- ½ teaspoon orange zest
- ¼ teaspoon red pepper flakes
- 1 clove garlic minced
Instructions
- Preheat the oven to 350°F.
