My Ninja Foodi multipot has 14 functions, but I've only ever used the pressure cook and saute settings. So I decided to start exploring its many other functions. My first experiment was this frittata that uses the saute and bake settings. Who knew the Foodi could bake? Well, Ninja did, obviously. And now I know, and so will you!
So what is a frittata? Is it the same as a quiche? No, they aren't the same. They're both egg dishes filled with meats and vegetables, much like an omlette, but cooked in a pan in the oven. But a quiche is a French dish with a pastry crust, and a frittata is an Italian dish without a crust. They're both delicious, but a frittata is easier because you don't have to deal with making a crust. And you can make it in a multipot, like the Ninja Foodie or Instant pot, if it has a BAKE function.

Ingredients
Here's what you'll need. We used black cherry tomatoes from Debbie's greenhouse!
- Onion
- Eggs
- Ham
- Tomatoes
- Baby spinach
- White Cheddar cheese (or any other cheese you like)
- Mushrooms
- Butter
- Garlic
- Kosher salt and black pepper
- Milk

Instructions
Add the eggs, milk, cheese, salt, and pepper to a large bowl.
Mix it together and set it aside while the pot is heating.
Saute the onions for about 3 minutes.
Add the garlic and stir for 1 minute.
Add the mushrooms and saute for about 5 minutes.
Add the ham and stir for about 5 minutes; it's already cooked, so you just have to heat it up. Then add the spinach and stir for a couple of minutes until it starts to wilt.
Add the tomatoes and stir for a couple of minutes.
Remember those eggs? Pour them in and stir it up, then close the lid and turn on the heat!
Open the lid after five minutes. Hey, that looks good already!
But it will be even better with more cheese! Close the lid and let it finish cooking.
Take the pot out of the cooker and set it aside for 10 minutes to cool.
Take the frittata out of the pot.

Notes
The "upper crust"
The top of the frittata will be crispy, which is not the usual case. If you don't want a bit of crunch with your eggs (we loved it!), add the extra cheese at the last two minutes of cooking instead of the last 5.
Getting it out of the pot
Frittatas are traditionally started on the stovetop in a skillet, and then the skillet is put in the oven to bake. That makes it pretty easy to get out of a pan. But how do you get it out of a deep pot?
What I did was first loosen the edges of the frittata with a silicone spoonula (a cooking spoon with a flat end, my essential sauteing tool). The I put a large serving plate upside down over the top of the pot and carefully turned it upside down. Since the Ninja Foodie has a nonstick pot, the frittata slipped right out.
But now it was upside down! I So put another serving plate over it and turned it over again.
Substitutions
- Cheese - you can use any cheese you like
- Tomatoes - any chopped tomato will work here, but I don't recommend canned tomatoes, they would add too much liquid
- Vegetarian - leave out the meat
- Vegetables - you can remove, add, or replace any of the veg... add potatoes, replace the spinach with sugar snap peas or snow peas, use your imagination!

Ninja Foodi Loaded Ham and Cheese Fritta
Special Equipment Needed
- 1 Chef knife
- 1 Cutting board
- 1 Ninja Foodi 14-in-1 8-quart SMART XL Pressure Cooker or other multicooker with a BAKE function
Ingredients
- 12 large eggs
- ¼ cup milk
- 3 tablespoons butter
- 1 cup white Cheddar cheese shredded
- 1 small onion chopped
- 2 cloves garlic thinly sliced
- 8 ounces mushrooms sliced
- 8 ounces cooked ham diced
- 5 ounces baby spinach roughly chopped
- 1 cup cherry tomatoes sliced in half
- kosher salt and black pepper
- ½ cup white Cheddar cheese shredded
Instructions
- Set the Foodi to SEAR/SAUTE on HI. Select START/STOP and let it come to heat for 5 minutes.12 large eggs, ¼ cup milk
- While the pot is heating, add the eggs, milk, and 1 cup of white Cheddar cheese to a large bowl and whisk to combine.1 cup white Cheddar cheese
- Add the butter to the pot and let it melt for about a minute. Add the onion and saute for 3 minutes.3 tablespoons butter, 1 small onion
- Add the garlic and cook for 1 minute.2 cloves garlic
- Add the mushrooms and saute for about 5 minutes.8 ounces mushrooms
- Add the ham and cook for 2 minutes.8 ounces cooked ham
- Add the spinach and saute until just wilted.5 ounces baby spinach
- Add the tomatoes and stir for 2 minutes.1 cup cherry tomatoes
- Pour in the egg mixture and season with salt and pepper.kosher salt and black pepper
- Close the Foodie lid and select BAKE/ROAST, set the temperature to 400F and the time to 15 minutes. Select START/STOP to begin cooking.
- After 5 minutes, open the lid and sprinkle ½ cup of the cheese over the eggs. Close the lid to continue cooking.½ cup white Cheddar cheese
- When cooking is complete, remove the pot from the cooker and let it sit for 5 to 10 minutes before serving.
