This is a great meal for breakfast, brunch, or dinner. It's got a surprising amount of flavor, and it's even better with a fried or poached egg on top!

Ingredients
 

  • 2 tablespoons canola oil
  • 4 large red potatoes about a pound, diced
  • 1 pound kielbasa diced
  • 1 medium onion chopped
  • 1 bell pepper any color, chopped
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 (11-ounce) can corn

Instructions
 

  • Heat 1 tablespoon of canola oil in a large skillet over medium-high heat. Stir in the potatoes and kielbasa and cook for about 10 minutes, until the kielbasa is browned and the potatoes are translucent.

  • Add the onions, bell pepper, red pepper flakes, onion powder, and garlic powder. Add salt and black pepper to taste. Cook, stirring occasionally, until the potatoes are tender, about 10 minutes.

  • Mix in the corn and cook for about 2 minutes.

An Egg on Top Makes it Even Better!

  • Prepare eggs to preference... sunny side up, over easy, or poached, or even soft scrambled.
    6 eggs
  • Portion the kielbasa hash into 6 servings, and top each serving with a fried egg.
