Sautéed Radish Greens with Bacon

We found some awesome radishes at the store today... crisp, mild flavor, and larger than usual. Even better, the greens were fresh and beautiful. They looked like they had been picked that morning! When you get a bounty of greens like that, you've just got to cook them up!

Ingredients
 

  • 4 cups radish greens washed and coarsely chopped
  • 2 slices bacon chopped
  • 1 small onion halved and thinly sliced
  • Salt and black pepper to taste

Instructions
 

  • Pick through the greens and remove any that have started to wilt. Wash the greens well to remove any dirt.
  • Cook the bacon in a skillet over medium heat until it's crispy, about 8 minutes.

  • Add the onion and cook until they're transparent, about 5 minutes.

  • Add the radish greens to the skillet and sauté until they're wilted. Season to taste with salt and pepper, and serve.
