Combine the shrimp, garlic, paprika, chile powder, cumin, Mexican spice blend, salt, pepper, olive oil, lemon zest and juice, and lime zest and juice in a large bowl. Mix to coat the shrimp with the seasonings.
2 pounds uncooked shrimp, 4 cloves garlic, 1 teaspoon paprika, 1 teaspoon ancho chile powder, 1 teaspoon ground cumin, 1 teaspoon Mexican spice blend, ½ teaspoon salt, ¼ teaspoon pepper, Zest and juice of 1 lemon, Zest and juice of 1 lime, 2 tablespoons olive oil
Combine the crushed tortilla chips and oil in a small bowl.
1 cup tortilla chips, ¼ cup olive oil
Spread the shrimp mixture into a large baking pan and sprinkle with the chips mixture.
Bake until the shrimp turn pink, about 12 minutes. Check for doneness and put them back in the oven for a couple more minutes if needed, but take care not to overcook!
