Pressure Cooker Spiced Coconut Pork Roast

We got a good deal on an 8-pound pork butt roast at one of the big box stores. I've usually cooked them in the oven, but I decided to use our Ninja Foodie multi-pot this time. This was a great idea, it cooked in less than half the time... which with a roast this large was a huge time savings!

  • Pressure cooker Instant Pot, Ninja Foodie, etc

Ingredients
 

  • 1 boneless pork butt or shoulder roast 3 to 4 pounds or larger
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • 1 tablespoon avocado or canola oil
  • 1 onion peeled and cut into 8 pieces
  • 4 cloves garlic thinly sliced
  • 1 (13.5 ounce) can coconut cream
  • ¼ cup lime juice
  • lime wedges for serving

Instructions
 

  • Mix the cardamom, ginger, garlic powder, salt, pepper, nutmeg, and allspice. Rub the seasoning mix over the surface of the roast.

  • Coat the bottom of the pressure cooker with the oil. Put the roast in, and add the onions, garlic, coconut cream, and lime juice.
    1 tablespoon avocado or canola oil, 1 onion, 4 cloves garlic, 1 (13.5 ounce) can coconut cream, ¼ cup lime juice
  • Cook on high pressure for 15 minutes per pound of meat. The meat will release water and fat, which will increase the amount of broth.
  • Serve in bowls, and garnish with lime wedges.
