We're not that much into green salads here, but we love chilled salads made with fruits and vegetables. (Not usually at the same time!). Watermelon and cucumber make a great combination of flavors and textures, elevated with ginger, lime, and mint. And we like to add a bit of heat with some cayenne pepper!

But cukes, squash, tomato, and peppers are treated as vegetables most of the time in cooking because they have a lower sugar content so are more savory, while melons are considered to be fruits.

Ingredients
 

  • 1 ¼ pounds diced watermelon about 4 cups
  • 1 English cucumber trimmed, quartered lengthwise and cut into ½-inch thick pieces
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons fresh ginger finely grated
  • ½ teaspoon cayenne pepper (optional)
  • ¼ teaspoon fine sea salt or table salt
  • ¼ cup fresh mint leaves minced

Instructions
 

  • In a large bowl, toss the watermelon and cucumber until combined.
