Surprisingly Amazing Flavor!

You don't always need a lot of spices to get great flavor! This salad combines the sweetness of shrimp, the creaminess of avocado, the tang and crunch of hearts of palm, the acidity of grapefruit and lime juice, and the funkiness of goat cheese.

What is Heart of Palm?

Heart of palm, also called palmito, is a white vegetable that comes from the core of some kinds of palm trees. It contains essential amino acids that aren't produced naturally by your body, so it's a good choice for salads or vegetable trays.

Heart of palm is sweet, crispy and firm in texture, with a delicate flavor. It is usually found pickled, so it will have a bit of tang too.

You should look for hearts of palm in cans or jars in the pickles section of the store, near the artichoke hearts and pickled mushrooms. If your grocery store doesn't carry it, check out a natural foods store, or shop for it online.

I can't eat grapefruit, it interferes with my medications.

You can substitute orange segments, or use sliced cherry tomatoes, instead of grapefruit.

Can I use a different kind of cheese?

Yes, but you want a cheese that crumbles well, with a strong flavor. Blue cheese or feta would be good choices.

What can I use instead of hearts of palm?

Marinated artichoke hearts are the best substitute for a salad like this.

Where do I get grapefruit segments?

You can get them the hard way by segmenting a grapefruit. Do a search for "how to segment a grapefruit" and you'll find lots of pages that show you how to do it.

I take the easy way out and buy Del Monte Red Grapefruit in a jar.

Ingredients
 

  • 16 ounces frozen cooked shrimp thawed
  • 8 ounces hearts of palm cut into 1-inch pieces
  • 1 avocado diced
  • 2 cups grapefruit segments
  • 4 ounces goat cheese crumbled
  • ¼ cup green onion sliced
  • 1 teaspoon salt

For the Dressing

  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • ½ teaspoon black pepper

Instructions
 

  • Combine the shrimp, hearts of palm, avocado, lime juice, goat cheese, and green green onion in a large bowl.
    16 ounces frozen cooked shrimp, 8 ounces hearts of palm, 1 avocado, 2 cups grapefruit segments, 4 ounces goat cheese, ¼ cup green onion, 1 teaspoon salt
  • Whisk the lime juice, olive oil and black pepper in a small bowl.
    2 tablespoons lime juice, 2 tablespoons olive oil, ½ teaspoon black pepper
  • Pour the dressing over the shrimp mixture and mix gently. Season to taste with salt and pepper, if needed, and serve.
