Minestrone is one of the classic Italian soups, and it's really easy to make in one of Ninja's new multicookers, the Ninja PossibleCooker Pro. This is a large recipe, it will feed a crowd!
We're always looking for ways to cook more quicky and efficiently, especially when it comes to energy use. I got excited when I started hearing about Ninja's new multicookers, the Combi, Speedi, and PossibleCooker. So of course I had to have them! You can read about them in my post, Meet the Ninjas.
I decided to try making Minestrone Soup in our new Possible Cooker. I was really impressed with this appliance. The pot gets hot on the SEAR/SAUTE high setting, so you can really brown that meat or cook those vegetables quickly. It's large, 8 ½ quarts. (If you don't need that much there's an Everyday PossibleCooker that's 6 ½ quarts.) It may look like Arnold Slowcookernegger, but it's a lot more than that. Remember, it's a multicooker! In fact, this soup is cooked on the BAKE setting!
So back to the recipe. This is a hot soup, so it's perfect for fall or winter. But really, hot soups and cold soups are great any time of the year! This is also a vegetable soup, so it will fit well in a vegetarian diet.
Ingredients
Here's what you'll need to make this Minestrone Soup. No exotic ingredients, just things you should find in your pantry and the produce section of your grocery store.
- Carrots
- Spinach
- Celery
- Macaroni
- Vegetable Stock
- Onion
- Garlic
- Salt and pepper
- Dried oregano

Instructions
Remove the lid from the pot. Turn the dial to SEAR/SAUTÉ, set the temperature to HI, and press START/STOP to begin preheating. Allow the unit to preheat for 5 minutes.
Add the oil, carrots, celery, onion, and garlic to the pot.
Cook uncovered for 5 minutes, stirring occasionally.
Add the tomatoes, , oregano, salt and pepper to the pot.
Add the pasta. Yes, the pasta cooks in the soup along with everything else!
Mix everything together.
Pour in the stock, stir it up, and cover the pot. Turn the dial to BAKE, set the temperature to 350°F, set the time to 30 minutes, and press START/STOP to begin cooking.
After 25 minutes, add the spinach to the pot and stir to combine. Cook uncovered for 5 minutes, until the spinach is wilted.
When cooking is complete, serve the soup immediately with parsley, Parmesan cheese, and chile flakes as desired.
Substitutions
- Spinach - substitute another leafy green like collards or chard, or another vegetable like green beans or peas
- Oregano - use Italian herb blend instead
- PossibleCooker - Sure, you can make this in a stock pot or dutch oven, but where's the fun in that?

Ninja PossibleCooker Minstrone Soup

- 1 tablespoon canola oil
- 3 carrots thinly sliced
- 3 ribs celery thinly sliced
- 1 onion chopped
- 4 cloves garlic minced
- 2 (14-ounce) cans diced tomatoes
- 12 cups vegetable stock
- 1 tablespoon dried oregano
- 16 ounces elbow macaroni
- Kosher salt to taste
- Black pepper to taste
- 5 ounces baby spinach roughly chopped
- Parsley chopped, for serving
- Grated Parmesan cheese for serving
- Red chile flakes for serving
