We found some awesome radishes at the store today... crisp, mild flavor, and larger than usual. Even better, the greens were fresh and beautiful. They looked like they had been picked that morning! When you get a bounty of greens like that, you've just got to cook them up!

Get Your Greens!
My family were Yankees from Chicago. But shortly after I was born we moved to Nashville, and I lived there until I was 7 when we moved back to Chicago. I found out many years later that the Southern ladies were scandalized that our mother would cook vegetables and throw away the greens! I've learned better since then, and when I can pick up vegetables with a good bunch of greens, they're going to go into the pan!
Vegetable greens have tons of vitamins, minerals, and fiber. They're one of the healthiest things you can eat! People are generally familiar with the "leafy greens" like spinach, chard, collard, and kale. But outside the South, many people don't think about cooking up the greens from root vegetables like radishes, turnips, and carrots.
So think about it. The Southern ladies will smile upon you!
Ingredients You'll Need
- radish greens
- bacon
- onion
- salt and black pepper
Cook Up Those Greens!
This recipe couldn't be much simpler. You'll need a lot of greens, and some bacon, onion, salt, and pepper.
Here's what we got from three huge bunches of radishes we found at our local store. This is about 6 cups of greens.
You want really fresh greens. Just look at these! We haven't seen radish greens like this since I can't remember when!
You'll need to wash the greens thoroughly. Radishes grow in dirt, and there will be a lot of grit in the greens. Check the recipe notes below for how I clean my greens. Chop them up, chop some bacon, slice an onion, and you're ready to go!
Fry the bacon in a large skillet until it's as crispy as you like.
Add the onions and sauté until they're soft and translucent.
Dump in all those greens. This is why you need a large skillet!
Cook until the greens have wilted.
Kitchen Hint: After you've put the greens in the pan, add a tablespoon of water. It will steam up and help wilt the greens quickly!
Serve up the greens! Root vegetable greens are more bitter than leafy greens, but bitter is one of the five basic tastes, and learning to appreciate it will broaden your palate. So tell your family to eat their greens! It's good for them!

Sautéed Radish Greens with Bacon
Ingredients
- 4 cups radish greens washed and coarsely chopped
- 2 slices bacon chopped
- 1 small onion halved and thinly sliced
- Salt and black pepper to taste
Instructions
- Pick through the greens and remove any that have started to wilt. Wash the greens well to remove any dirt.
- Cook the bacon in a skillet over medium heat until it's crispy, about 8 minutes.2 slices bacon
- Add the onion and cook until they're transparent, about 5 minutes.1 small onion
- Add the radish greens to the skillet and sauté until they're wilted. Season to taste with salt and pepper, and serve.Salt and black pepper, 4 cups radish greens
